Paris hotel recommendations

Hello! I have a big birthday coming up this summer and as part of the celebrations, I’d like to go to Paris with my DS 13.
It will likely be just me and him - or possibly my mum might join us too. (Partly taking him because then I can go off for a luxury weekend with DP and not feel guilty, partly because he mentioned he’d like to go)

Has anyone any good hotel / district recommendations? I don’t want to spend a fortune per night and breakfast isn’t really important. It’s more just about being somewhere safe and easy to get round on our own. We’d likely Eurostar.
All he wants to do is ‘eat baguettes in a road side cafe’ and go up to Eiffel Tower! It would be a lovely thing to do together.

I lived in Paris for a few years, also travelled there for a few weekends with DS (now 14). If you want somewhere fairly central, with a good Parisian rather than tourist feel I would say stay in the 15th, around La Motte piquet métro station. Very close to the tour Eiffel, and lots of cafes, shops etc. Or a little further out on line 6 metro at Montparnasse, which also has good restaurants and cafes and may be a bit cheaper. Or around Charles Michel metro station in the 15th. There are lots of cheap (for Paris) hotels around there which are good for a few nights. If you do stay around there go to Aux Artistes restaurant on rue Falguiere one night. Very cheap, great atmosphere, and really good traditional French food.
