any ideas for a winter holiday with a 3yo and 7mth old with child care?

We need a holiday and hopefully will have enough pennies by December time to take one - preferably somewhere hot with good childcare facilities. (have seen firsthand the Sunsail club in Antigua and did not fancy a holiday there!)

Does anyone have good ideas or recommendations?
