My favourite restaurant was 'Casa Jacinto'. Its in the hills back from the main beach and town, and almost in the hill behind the port. There was another, apparently more popular place across the road, but we preferred this one was slightly quieter, really friendly, homely feel and delicious food. Snails (caracoles) and steak cooked on a hot plate were popular are delicious, but also multiple other local dishes. Our hotel provided vouchers for a free drink there, plus the restaurant gave us a free digestive shot after the meal!
We stayed at BQ Augusta, which was uphill from the port and not too far from the restaurant, but not near the centre of town. For 1 night, I'd stay more central.

It's a Michelin Star Restaurant and the food is fantastic, lovely relaxed atmosphere and hotel & restaurant are located in the old town so perfect for a wander around in the day, tapas for lunch and drinks after dinner.

Innside Palma center hotel and Forn restaurant (opposite bar abaco) - the hotel is quite central and has a roof top pool and bar plus fab breakfast. Forn is tapas with a twist - but expensive but worth it and you'll need to book in advance!

Have stayed on the marina in Hotel Costa Azul and in the Tyrp Bellver, both nice hotels. Was with DS so didn't do posh dining but had some lovely meals.

The centre of Palma is really nice.
