How can my daughter drive here from Liverpool when her young baby can only stay in the car seat for two hours. Her journey will take 7 hours.
Any ideas.

I'd say her options are: get a lie flat car seat, stop every two hours and take baby out for a bit, or get the train.

How old is the baby? I'm not sure how long the 2 hour rule applies for tbh.

Stop every 2 hours. Presumably they will need feeding and changing anyway.

Yes, you just have to stop. Young babies need feeding frequently anyway.
