February European luxury break

Last February my mum and I went to Budapest and stayed at the New York Palace which was super luxurious and amazing but also relatively cheap due to the location.
Looking for something similar for 2020, probably 3-4 nights in a gorgeous hotel but in a city where there's also plenty to see/do and lovely restaurants and bars. Already done Copenhagen, Prague, Seville, Barcelona, Edinburgh.

I went to Florence and Pisa during the summer and it was beautiful. Fly into Pisa and Florence is only 1 hour away on the train. I did 2 nights in Florence and 2 nights in Pisa. There's definitely more to do in Florence though. Can't advise re: hotels because we stayed in an air bnb.

Palma in Mallorca, fabulous hotels, bars and restaurants.

Rome cold but quieter than the summer.
