Forest Holiday in Europe?

I was wondering if anyone had any recommendations for a holiday village set in a forest in Europe please?. I have been looking at De Vossemeren Centerparc in Belgium and it looks lovely but I'm not sure if there is enough forest to explore.
My 12 year old son is very keen on hiking and loves lake/forest holidays and so do I. My OH is more keen on beach holidays so I would like to find a place where there are some activities..if we keep him entertained, he might not notice that he's not baking beside a pool!

Also recommend Peak District, Lake District, Scotland
Seen some amazing trees with moss growing on them in Scotland

I've seen a holiday in one of the Scandinavian countries, where logs are provided. You make your own raft & float down a river. I anticipate that this was in a forest area.
