We are off to Gdansk for 4 days,any recommendations for things to see or places to eat or drink. And any off the beaten track musts

I pressume you are already planning to go to WW2 museum and solidarity museum? Both are excellent. Queues for former can be long and may be given entry time later in day... We queued and purchased for next day. Both museums are cheap with excellent audio systems in English. I think both are closed Mondays.
Gdansk, Sopot and gdynia have merged together and you can get a dirty cheap train from one to another for a wander.

You can also get a train to malbork Castle (better on a dry day)
