3 night 50th weekend in the sun with friends -help!

Hi
I'm feeling daunted by arranging a stay next year for special birthday celebrations with a small group of friends.
Budget is £500ish or less per person. Any board basis
Somewhere beautiful, scenic and a villa/apartment/hotel with a lovely pool and comfy sunbeds as we'll be relaxing all day and exploring the local scenery, restaurants and bars by night.
About 2-3hrs flight time from UK and temps mid 20's
Any inspiration?

A couple of friends & I who are all 50 over the next 6 months are talking about possibly going to Nice in June & renting an apartment (probably AirBnB) in the old town & it’ll be around the £500 mark with cheapo flights from Gatwick. I’ve been there a couple of times & it has a great vibe and though I’m not sure how much travelling around we will be doing (if it comes off), it’s on the train network that connects the Riviera & the likes of Monaco and Cannes are easy journeys. More importantly for this trip I think will be plenty of good restaurants & good wine in a very attractive place in the sunshine!
As the PP has said though it does completely depend on when you’re able to go and what you want the weather to be like!

Sorry - just re-read your post! Apartment in old Nice unilikely to have a pool so that would be a case of looking at hotels which could drive the price up quite a bit in the centre of Nice (as i assume you won’t really want a long walk back of an evening). If you are happy to forgo the pool and sea swim (which we have done in the past) Villefrsnche right next to Nice has a nice beach. And you have given temps. What month would be useful though. If it’s summer of the top of my head for £500 all in with pool, perhaps Seville? It’s a beautiful city and has a relaxed vibe and you could do as much or as little as you wanted to. Split could be another good alternative as the old town is very pretty with plenty of places to eat out - not sure how many of the hotels would have pools but worth a look!

How about something like this? You should be able to pick up flights to Nice for about £200 each or less I’d have thought -

I'm just back from Dubrovnik and I think the Valamar Lacroma hotel might fit the bill. It's about a 10 minute Uber ride from the centre and has a lovely outdoor pool area ( I spent a lot of time there as recovering from a virus). Rooms are nice, breakfast was amazing and they have good cocktails. There are some smart restaurants and a really cool bar in a cave that are within walking distance and then there is always the centre which is much less busy in the evening.
We booked an Easyjet holiday package deal and it was less than £500 for 3 nights.

Oh and Dubrovnik temperature was around mid 20s although there were a few bursts of rain.

Palma or Malaga - both nicer than I imagined and tons of flights.

Malaga, Seville, Valencia, Palma. Should be great weather in early September. All have loads to do and see. Quick flights and definitely doable for less than £500 each. Greece would still be lovely but flight times longer and less availability I should think.

Just got back from a girls weekend to Palma and I can’t recommend it enough. Sun, sea, fab food, culture, amazing cocktails and lovely shops. Some great hotels in the centre although we stayed just outside to keep costs down.

How many of you?
Last year we had an amazing villa in the south of France two minutes walk to rousillon.
I think it was seven double bedrooms all lovely beautiful pool views of mont ventoux
Price was less than 5000 euros for a peak week

Valencia...cheaper accomodation than Barcelona, not has crowded
