Short break - city and resort style hotel

Can anybody suggest a Hotel which fits this brief for a short break this summer:

European city which won't be too hot as we have a newborn (so probably not Southern Europe)

Charming city with nice food and the kind of place you can just wonder around enjoying rather than actively sightseeing as such

Hotel which perhaps has a pool / spa and ideally feels resort ish so perhaps a nice courtyard or garden or views

Bonus points if easily accessible to nice countryside

Croatia is good! Perhaps try visiting Split, then hopping to the island of Hvar?

I'll take a look but no sure if it'll be too hot. We also want direct flights which makes it more complicated!

Bilbao? Chilled, great food, friendly people, not expensive and some of the hotels have rooftop pools

Somewhere like Amsterdam is nice although it’s been a while since I have been so not up to date on hotels. Or places like Delft and Maastricht.

Or how about Le Touquet - get the ferry/Eurostar rather than the hassle of flying. A couple of big old hotels with pools and beautiful grounds which sometimes have really good deals. Or a Novotel and ibis which are linked by a spa and amazing pool between them, pool is indoors but right next to the beach and that end of the building is basically a large window so you’re swimming a length down towards the beach and sea. Massive beautiful sandy beach. Nice french town to wander around. Other nice towns to wander around and explore but would need to go further for bigger towns, lots of the old war stuff within easy striking distance.
Maybe combine with a stay in Lille or arras for a couple of days to get a mix of beach and more city stuff.

@OllyBJolly I'll take a look at Bilbao thanks! Wasn't sure if the city is charming enough :)
