Do you like hills/mountains or flat? Would you be happy to drive or just use public transport?

Hamburg is a great city and you could take trains to Travemünde at the Baltic Sea or drive north to something called Holsteinische Schweiz (Eutin, Plön) for some nice countryside with huge lakes for a couple of days.

If you like mountains go to Munich and Starnberger See. Or further south to Garmisch Partenkirchen and some hiking,

Fly to Freiburg or Stuttgart and get to Lake Constance.

You will find riding schools all over Germany but I don’t know of they would just let people ride without a teacher and finding one speaking fluent English may be difficult. You could search for a stable when you know your destination and see what you can find.

Hey there @reluctantbrit - thanks for replying.

We’re happy with hills or flat, and happy to drive or use public transport, so I’ll look into all your suggestions. I quite like the idea of travelling by train (as I drive a lot usually) and we thought seeing a city for a few days followed by going out to the country would be ideal!

Have a look at The Eifel it's a beautiful mountainous area with lakes and pretty villages and not far from the cities of Aachen and Cologne.

@Mumthedogsbeensick (great name! Should be me!) thank you - I’ll look at that area too - great to have recommendations as I’ve never been to Germany before

I second Hamburg and then train up to the coast. It's my second favourite city in Germany (after the one I live in Wink) and we've just come back from a few days there.
Do a boat trip around the port including the Speicherstadt part which is really interesting.
There are some lovely parks to wander round and relax in with an ice cream, loads of great places to eat (loads of authentic Portuguese and Afghan places to eat for an alternative to German cuisine). Really good shopping of you fancy that kind of thing.
Follow it up with a couple of days up on the North Coast where there some beautiful beaches. There will definitely be horse riding opportunities there too.
Let us know where you decide on!

@givememarmite thank you for your ideas. We have lots to think about now! I’ll certainly let you know what we choose to do. I’m really excited about it!
