Where to go for DH's sabbatical?

Dh has a sabbatical coming up so we are planning to go away somewhere in June for 3 weeks and have no idea where to start! We are taking our dc out of school (age 6 and 8) so that we can go as a family. I think that wherever we go we would probably like to get an airbnb so that we can be flexible while we are there.

Our criteria are as follows:

• Somewhere where we can relax a bit but where there will also be things to keep the dc entertained.
• Budget. We only have £3.5k to cover everything (flights, accommodation, car-hire, spending money etc) so it needs to be very reasonable.
• Somewhere hot (but not too hot for a 1yo).
• We aren't adverse to changing location part-way through in order to get the most out of it.

So go on, what would you do if this was you?

Italy - Pompeii, Rome, Venice then on to the Lakes, Croatia or down south the Sicily. If they enjoy the culture and history then maybe go to Athens instead. Could stay in a campsite just outside all those cities and have some chill out time by a pool/beach too,
If you drive could stop in Paris too and maybe do a day at DLP.
