As my dh is self employed and we can only go when it's near the time we would like to go.

Thomson sell their long haul seats cheap, if they haven't sold the holidays, usually 2 weeks before. Try Skyscanner.
Inclusive not my thing, so know nothing .

I've done this before, I booked a trip to LA with less than a week's notice and managed to get a good deal.

I'd say make a list of places you are interested in visiting then go through them and see if you can find something reasonable. Also Google flight matrix is very good for showing cheapest dates for flights.
