You can buy nappies etc there. Depending on how big an island/proximity to big shops you may need to take specific formula with you if you need that. Baby food - most restaurants will heat up jars for you or give you small portions. The locals love babies and kids do you'll be fine! Take a pushchair that lies flat or in a comfy sleep position so dc can sleep in the evening when you're out.
Get baby friendly sun cream and mossie repellent. I'd also make sure you get air con if going in the summer as it can get very hot. It might be worth buying a wee paddling pool you can use as a bath and a cook off play zone on the balcony as a lot of Greek places have showers. Depends where you are staying though!! Sun hats and a wee shade for the buggy if it summer, warmer blanket for evenings if out of summer.
But you can buy stuff there as Greek babies manage!
I'd bring familiar toys etc.
