Universal and the water parks will take up a lot of time!
Kennedy space centre is great for a long day out -
or Busch Gardens for some big coasters and animals.
A trip to the beach, Atlantic coast and wave to folks at home... Gulf coast and warmer waters... Dolphin watching
a trip to a country park - De Leon Springs is great - it has a natural spring, a river and a pancake house where you cook your own pancakes at the table.

We went to Wild Florida wildlife park/airboat ride - and booked a sloth experience where you got to feed and stroke a sloth, added on an airboat ride where we saw alligators/bald eagles/turtles etc and a trip round the little wildlife park too.
Then there are the malls with all sorts of shops and eateries.
There is also Gatorland which is ok, but looks a bit "old" now.
There are many cinemas - some of which have tables where you can eat - you could go to a drive in too.
Or a rodeo - take plenty of insect repellent
Or a sports game - basketball/baseball/american football.
or a concert/show - hard rock hotel, hard rock venue and a few other places in Orlando have concerts most weeks.
Celebration town is worth a visit - and an ice cream or two...
On top of all that if you want a little Disney bit you can go to Disney Springs - the shopping/eating/drinking area for free and to any of the hotels to have a look round/meal/cocktails.
