Summer holiday abroad with kids and MIL - a location to keep everybody happy??

We're planning to have MIL join us on our summer holiday (somewhere in Europe...) next year, and whilst the actual holiday will I'm sure be fun, there's already a bit of to-ing and fro-ing about requirements for the location so if anyone has done this successfully, I'd love to know where.

I think that the pertinent info is that we will have kids aged 11 and 8, and have promised them that we will stay somewhere that has plenty of other English speaking kids to hang out with. Our last few holidays haven't delivered on this and they are both really sociable and love meeting new pals so this is non-negotiable. MIL however is being a bit sniffy about resorts, so wherever we go will at least need to have a quiet spot - or she's quite happy to take herself off to the beach as long as it's very close.

AI is out - MIL not a fan and to be honest, I do like going out to eat so that's cool. DH, the kids and I do all love a breakfast buffet so somewhere that did that would be ideal.

It's the format of the accommodation that I'm unsure about - can you get a 3 bedroom holiday apartment in a resort-style place? Maybe we can arrange her own room and pay the single supplement? We all like the sound of Greece but are open to other countries, and the likely date of the hol is during the first two weeks of July (Scottish School Hols)...

Any thoughts would be massively appreciated!

I think James villas do villas in hotel complexes. Depends on your budget though
