Winter Sun?

Can anyone recommend a shorthaul or not too long haul destination for a Jan/ Feb bit of Sun? Temp 25+ ?
4 nights 2 adults not too developed /touristy?

Portugal, the algarve. It's cold at night but gorgeous during the day.

Will Portugal be reliably that warm at that time of year?

If reliable winter sun is more important than interesting cultural things to do, your best bet is probably Cape Verde or the Canaries, but the latter still could still be changeable as it's pot luck between about November and April in my experience.
