Winter holiday for 1 year old but not sunny

Hey

Perhaps I am asking for the impossible but I would like to go on holiday during the winter either Dec/Jan or Feb with DH and 1yr old and 5 year old - a week or 10 days would be ideal happy to fly anywhere c5 hours away but could do Uk if anywhere suitable

I am not wanting to go for winter sun or for a specific hardcore skiing holiday -

I wouldn't mind a ski resort that perhaps had sufficient non skiing activities and charm for non -skiers but neither me nor DH ski so a full on ski experience wouldn't be for us

I would be hoping for some childcare options

Any ideas

When I say not wanting to go for winter sun I mean I don't want anywhere ludicrously hot and would welcome any ideas for winter hols that are not beach based

What about a city break somewhere like Barcelona? You'd have the beach and also culture / parks etc. Sunshine but not crazily so. Or Nice / vote d'azur?
