I'm Irish and would recommend:
Trinity College including Book of Kells.
Guinness Storehouse.
St Stephens Green park is fab on a sunny day
Afternoon Tea in Westin or Shelbourne Hotel if that's your thing

Avoid Temple Bar pubs and restaurants. George's Street and surrounds is good for eating, very central and not touristy

For hotels Cliff Town House has an amazing location and bags of character

Agree about St Stephens Park. Stayed near there & it was lovely.

Also go to Mulligan's in Poolbeg Street. My friend who lives in Lucan told me it was like velvet & she was right

Mespil hotel is cheap, smart enough and great location. Great value.
