There's no package holiday to the hotel I want to go to and no scheduled flights released. So if I travel EasyJet would my travel insurance cover it?

If you buy an annual cover it will cover you for any flights.

EasyJet is a scheduled flight. Any policy will cover it. A non scheduled flight is a small, privately owned plane, flown by anyone with a pilot's licence.
