Edinburgh recommendations please!

Planning a weekend away so if you have any 'must do's' especially restaurant recommendations (breakfast, lunch, dinner) and nice bars (cocktails?) Have looked at the Witchery, the Kitchin and the Dome for dinner - any opinions?
I know I want to walk up Arthur's Seat (weather permitting)
Are the vaults worth visiting? Can anyone recommend a walking tour?

For cocktails look at Panda and Sons, Harvey Nichols, Tnoic, Copper Blossom or Juniper. For dinner Witchery is very romantic and Dome building is lovely, but food is better at the Kitchin or Castle Terrace ( but price higher too). Food also great at Wedgwood on the Royal Mile. Don't bother with the castle, it's v expensive.
Hoot the Redeemer good for cocktails.

Mary King's Close is great, terribly interesting. Lots of bus tours departing from out front of Waverley Mall. Edinburgh Dungeon is worth a visit too, and there's a lovely bookshop/cafe just along the road. Don't remember the same but signage is pink! Enjoy your trip.

Thank you - some great suggestions so far. I think we need a week not a weekend! Copper Blossom looks nice for drinks. Mary Kings Close and the Dungeon look really interesting - but maybe a bit similar to do both in one weekend?

Definitely Mary Kings Close. Our guide was a bit Am Dram, but it was fascinating all the same.

We love the Witchery for dinner, particularly the secret garden at the back. And you can get good value pre- and post- theatre menus if it's a bit pricey.

Not sure about bars (the one in the Balmoral always seemed popular), but we loved the Bow Bar for a pint and a whisky!

Would recommend a vaults tour but not the am dram scary type. The history of the people who lived in them is very interesting and lots of real info on history of witches etc.

The Witchery fully booked when we're there so sadly wont be eating there!

Went last weekend. We ate at Outsider. Food was lovely, great atmosphere and fabulous view of the castle lit up at night through the huge rear window.

Get yourself out of the Old Town/George Street thing and go bit further afield, eg down into Stockbridge by wandering through a residential bit the New Town, which Edinburgh is after all, so very famous for, lots of good delis and cafes on the way. Walk through Inverleith Park and across to the Botanics and get the bus back into town. Or go far a walk along the Water of Leith popping out at the Shore and have tea at Mimi's Bakehouse. Again, it's easy to get back into the centre from there.

Definitely Mary kings close. IMO it is the best way to see the real old Edinburgh. The vaults is just empty rooms in the dark.

The George hotel does good cocktails. I only ever go to the dome when the Christmas lights are up. It's pretty boring without.
