How quiet would it be begining of Jan ??3-6/4-7. I realise 6th is a bank holiday ...What about the weather ??

Things won't be closed. Christmas and NY are very low key apart from the big days themselves and bars and restaurants open anyway. 6th is the big bank holiday the day after which everything gets back to normal, touristy places don't close though. Supermarkets etc tend to do half day opening on public holidays. I don't think the sales start until later in Jan.
Weather should be fairly mild.

We went the 2nd week in Jan a few years ago. The weather was like a pleasant spring day. Warm enough to eat outside in the evenings. Everything was open, but not a queue to be seen.

We both vowed that when we go back again it'll be a January trip.
