2k to book holiday for this august - where to go

I want to book a holiday for the last week of august, 2 adults, 2 kids under 2k.

Am happy to book flights & hotel separately or do a package, would like it to have a waterpark nearby or a few slides in the pool for the kids. Am happy to do AI as it's only a week. But if not need to bring food into this budget.

Any ideas ? Was thinking Greece or Spain, possibly canaries - would rather avoid the balerics & turkey. I appreciate it's quite a tight budget.

Was wondering about leaving it til the very last minute, i.e. the week before but not sure if i will actually get a better deal.

For your budget, I'd look at booking independently. Look for cheap flights first and then see what accommodation is available in that area. I had a quick look and can find plenty of AI for your budget. The water park/slides might be the deal breaker though.

One I did find was Albir Garden Resort in Spain, but it has mixed reviews.
