Europe with extra interest/adventure?

We want to go on holiday in Europe in August for 2 weeks. Me + DP + 3DCs (9+9+11). Somewhere properly hot. Villa with a pool. Car rental. Ideally some good snorkelling nearish by. Budget about £8k.

Now, obviously, there are a ton of places that could meet those criteria. But we would also like some cultural attractions, some adventure, some fun things to do - things like tree top adventure places, waterparks, historic interest, etc would all help. Good food would be a nice bonus.

We've been to Cyprus and it was great in terms of the sun and water, but a bit lacking in interest away from the villa and the beach. And yes, I know we've left it late, but it is what it is...

We are just back from Costa tropical which is 1 hr up from Malaga.

We stayed in Almunecar which the Brits seem to have not discovered yet despite them serving free tapas with every drink bought. Seriously you need not buy dinner. Nearby are the Nerja caves, unspoiled beach coves, Granada and the stunning Alahambra, the Serra Nevada with this...
