Choice between full tour of Thailand or from Thailand to Cambodia to Vietnam, a few days in each?

up to 3 weeks.

Thinking of sending time on some thai islands and then a guided tour from Bangkok to Ho Chi Minh

I would definitely do the full tour of Thailand. If you only have a few days in each country you're really not going to see an awful lot and it'll be exhausting. DH and I spent 2 weeks in Cambodia on our honeymoon and loved it so much that we went back for another 2 weeks the year after. A magical place!
