Hubby and I want weekend away, somewhere that looks beautiful, good for cycling. The kids are not coming with us. Any ideas?

Roughly what area?

Mountain bikes? Road bikes? Inbetween, hybrid bikes?

The Peak District is lovely if not too far for you. Trails like the high peak trail, manifold trail are all car free and reasonable surface so as long as you're not on a racing bike you'd be fine. Lovely scenery.

Ferry to Amsterdam.

Patter, I'm thinking of taking the ferry to Rottrdam in the summer and cycling for a week from there, maybe up the Rhine cycle way. Looks nice.

The Trossachs (if it's not too far)

I would second the Peak District. Beautiful walking and cycling paths.
