If you're not bothered about character meals, and are staying off site, can you get by without advanced dining reservations?

Yes, absolutely, so long as you aren't fussy about where you eat, if you want somewhere particular book when you enter the park in the morning. Even when you book in Disney places you will arrive to be presented with a pager which will alert you when your table is ready, very annoying IMO. Have fun!

Pre booking does save you a fair bit of waiting time unless you are happy with just using the quick service type cafés/restaurants. For the table service of you don't prebook you have to use standby - that can mean waits of an hour at many places.

It also depends on what time of year you're going. We are here at the moment and it's pretty busy so waits are very likely
