There are plenty of self-catering hotels (aparthotels) in the Val d'Europe area, which is only 1 stop on the RER away from Disneyland (2 mins journey) and are also served by the free shuttle service.
Val d'Europe has a large shopping mall, (including a big supermarket) lots of restaurants and also a Sealife centre.

For a weeks stay though it may be cheaper to book a holiday rental locally, especially if you plan to drive there. I've booked a gite, in a village 10km from Disney, for only £400 for a week in September. It has a huge garden with swings, trampoline etc. to keep the kids entertained.

We will be staying at the adagio mentioned above next February. 4 nights is £200.
