Sunny, probably but not hot. We went right down to the Med (not far from Perpignan) in the Easter holidays a few years ago with a 5 and 3 yo. It was not hot and we were glad the house we rented had air con that doubled as heating in the evenings. All the photos show us out in the day with light cardies / sweatshirts so it was pleasant enough. Not sure if that was typical weather though.
