In Spain you get to see wonderful church parades over Easter - on the Thursday, Friday and Sunday - worth going just for that I think. (Some pictures here. ) We stayed near quite a small town (Alhaurin de la Torre) and it still had spectacular parades.

However most of the tourist places like water parks don't open at all until late May, and the shops open for limited hours Easter weekend (but they do open, you just have to check the hours v carefully).

We went last Easter and the weather was lovely, loads of sun but not too hot - still needed sandals on the beach though - Easter was a week later than this year but that shouldn't make too much difference.

We went to Nerja on the Costa del sol last easter.
Same here, the waterpark wasn't open, and some restuarants and pubs were closed though not all of them. We saw some lovely parades and the weather was nice. In fact we enjoyed going away at easter so much that we are going to Cyprus on Easter Sunday this year.
