UK holiday late May with toddler - any suggestions?

Planned holiday in the sun aborted due to DP health, so we're grounded in UK. Haven't really done UK holidays before, so would love any suggestions.

I want - relaxation, possibly some spa treatments, swimming pool, access to town or village.
He will want - pub, good restaurants.
We both want a few cultural options - castle, churches, archaeology...
DD will want toddler fun.

Does anyone have opinions on Center Parcs? I quite fancy it, but I think DP would probably rather eat his own hand. Are they located anywhere near real life, or all in the middle of nowhere?

If you can make it all the way to Scotland then Crieff Hydro is great - options to stay in hotel or get self-catering on grounds. We go for self catering and properties are excellent for families. Loads of walks and activities nearby and full use of hotel facilities. In easy reach of nice historical sites and great farm park nearby which my dd (20mths) loved.

center parcs is great for all on family fun - to make the most of it you need to stay within the complex all day. though they are all located in areas of interest so you could send dh off for one day, put DD in the creche for 3 hrs and enjoy the benefits of the spa!

I know a lovely little s/c place on the edge of th e longleat estate and 5mins (drive)to longleat safari park and a fantastic pub a 5min walk away. If you're interested. It's on the Frome borders.

should have also said that you can go into CP from here as a day resident for sole use of using the spa area. - could do this and send dh and dd off to cheddar gorge for the day.
