August easy hot hol with a 6,4 yr old and baby

Any ideas? We want:

-sunshine,
-something for kids to do that isn't us providing all entertainment (could be a club, could just be other kids and safe space to roam freely).
-We don't want to have to cook every night, so some eating out option within walking distance or right where we are would be good. However we do want to be able to have cheap lunches ie. Keep some crackers/fruit in the room/apartment without being bollocked or them crawling with ants in the heat (if there's no fridge.)
-pool access
-to have some beach option within a short drive so we can change scenery occasionally.

We are pretty pooped right now with a new teeny baby so keen to relax as much as poss but only have a budget of £3k for two weeks in August. I love the look of Villa Pia in Tuscany/Umbria and there is a similar place in Spain which looks amazing but they are far too expensive when you add up flights etc - nearer £5.5k. Mark Warner came out at £7k! Ouch. Or am I dreaming to think we can pay any less than that?

Gite complex in France - something like this? This would be well within budget factoring in a ferry crossing etc.
