Relaxed, warm holiday for a couple on a budget?

Hi everyone. My DP and I are hoping to go away at Easter, but we're saving for a big trip in the summer (not together - he's off to Asia, me to eastern Europe with friends) so we're on a budget - not too tight, but we'd like to find somewhere with cheap flights out of London.

We want somewhere we can relax, with good food and some nice sights. Maybe a bit nature-y, not so much of a city break, though we'd be open to that too. Neither of us drive so it needs to have decent travel links. I'd like somewhere that'll be a bit warmer than London!

I fancy an apartment in Carcassone for a week (though it might not be as warm as I was hoping...), which I think would be about £300 each. That's approaching the most we can afford really.

Really have no idea... We've never been on holiday alone together, even though we've been together for 10 years!!

We went to Madrid recently and while it is a city, it is a fascinating place, food is wonderful and as capitals go it is really cheap. I went in the Summer with Secret Escapes and it cost us £600 inc car hire (hardly necessary but DH hates public transit systems), breakfast and 2 evening meals for 5 nights between us. It may not fit your bill but gosh, it was a bargain (sadly DH doesn't like cities, foreign places, hot weather, fish or garlic, so I doubt we would go again...)

Assume you have looked at Skyscanner for cheap flights?

My suggestions are Dubrovnik, Lisbon or Jersey.
