Don't know if it's a bit out of the area you're looking for but The Inn At Whitewell is seriously good.

Are you prepared to consider a posh B&B rather than a hotel? If so, Shallowdale House in Ampleforth is terrific. They do dinner which doesn't have a choice of menu (though they would take into account if you don't like something and check what they're planning is ok) but is cooked really well.
They have an alcohol license too.

Somewhere else we went recently that was good - we camped at the Aysgarth Falls Hotel and had dinner in the restaurant, and based on how good the food was and how generally lovely the staff were the rooms are probably nice too. It used to be rubbish but re-opened with swish decor and food but reasonable prices.

Had forgotten about the Trough of Bowland. Gorgeous area. I suppose we could up to Lancaster and back down on the Sat night and home from there.

Have heard of the Inn at Whitewell. £208 for one night's B+B is a bit steep though, bearing in mind we will be paying for a meal and drinks on top of that [hshock]
