From Stansted with 4yo DD

Can anyone recommend a shorthaul destination from Stansted, suitable for 4yo DD next summer?

I'm particularly interested in a beach resort with has children's activities/entertainment for us to do together.

We have just booked to go to Fuerteventura, mainly because the flight leaves and returns toStansted at decent times..oh, and it should be warm and sunny! Lots of sand, some swimming pools, ice cream- 7yo DS will love it I think!
