Activity holidays in Spain? Or do you have a recommendation?

Ideally, we want to go to Spain as my daughter wants to practise Spanish and all activity hotels seem to be in Greece.

Where do I look? Any ideas?

Bikes, wind surfing or sailing would keep my teenagers happy but any other ideas welcome.

Looked up La Manga. Looks good. Anyone been there? tried the courses?
