If we want somewhere laidback, with nice beaches in Italy, where should we go?

Would love to visit Italy.

We like it to be quiet, not a busy tourist centre. As long as its got nice weather, nice places to eat and nice beaches we are happy.

Any recommendations

I'm just back from Lido di Camiorie (fly to Pisa then 30 min drive to the Tuscan Coast) and can totally recommend it as ticking all the boxes you listed.

Tuscan coast is lovely. I would also recommend San Vincenzo ( south of Livorno).
