Any ideas for family friendly luxury - last hols before starting school

I have a 4 year old and 6 week old. Looking for our last holiday before DS starts school in September so wanted to push the boat out and go somewhere that we wouldn't be able to afford next year when we have to go in school holidays. Any ideas - we have a healthy budget but not ridiculous.

We can go in may or June, and wanted a hotel in the med/Europe - anywhere is an option - somewhere with splash pool/ pirate ships/mini slides etc, WARM pools (which seem to be few and far between) and 5* accommodation. We went to sensatori Tenerife last September and had a great time although the pools where too cold for me. As we have a baby this year we need warm water and perhaps an indoor pool too.

Any recommendations?

I was going to suggest sensatori as we are going to Crete in the summer. I haven't been myself but friends have to Sani Beach Club in Greece and other friends have been to Martinhal on the Algarve which are 5* family friendly. Both were great.

Intercontinental Aphrodite Hills Resort was also recommended to us which is in Cyprus.
