Easter Sun for 3 adults and 2 kids

We're looking to go away for a week at Easter. We'd like somewhere with sun.
There will be five of us in total, me, DH, 2 DSs (5 and 1) and our au pair.

Ideally, since we'll need 3 rooms, I'd like a villa/apartment/bungalow within a complex or hotel. If it was just us, then we would be happy with a family room but having our au pair with us complicates it a bit ( I did offer to pay for her to go home for the week but she'd like a week in the sun too )

I've had a look at the Canary Islands but I've never been there before. Any other places with guaranteed sun in early April? Kid's clubs ( it will be the au pair's holiday too after all)?

My budget is £3,000 max - I realise it's a busy week - would prefer to spend less, obviously, but it's a big treat, DH is starting his dream job the week after

Why three rooms? Couldn't you or au pair have the kids? Would cut costs considerably.

Canaries are lovely at Easter, sunny but not too hot although the water may be a bit chilly.
£3000 for 5 people in 3 rooms is wishful thinking though especially in school holidays, unless you weren't counting flights?

Your best bet would probably be a villa, it depends how warm you want, we've been to Moraira in Spain with Villa Servers several times, great villas, lovely town and beautiful beach but usually in May...

You could try Princesa Yaiza hotel in Lanzarote. Should be warm in April, and there are good room combos for extra space.
