Baby friendly winter sun destinations??? Suggestions???

We are looking for a lastminute wintersun holiday (for Feb) for a week's break. We have a 4 m.o. DS and haven't been away with him before so this will be our first "family holiday"! We are kinda on a budget too.... We don't really like resort-type holidays as we prefer to see things and explore rather than laze around 24/7 (we get bored easily!). Now that we have DS, we probably need something balanced between the two (ie some sightseeing and some relaxing).

Does anyone have any suggestions or know of any good lastminute deals?

Canaries? Lots to see and do on Lanzarote

Thanks Blondeinlondon. Borrowed a guidebook on Lanzarote but am curious to hear about it from someone who's been. Sounds like that's you? . What is there to see and do? I take it you enjoyed it ...?

I've been many times, also been to Tenerife and Fuerteventura
Tenerife was a bit too commercial for me
Fuerte is nice sand dunes but not much else
Lanzarote has a volcano you can go tour round. A parrot park (not been to that)
It is all low rise apart from maybe 2 hotels. The Cesar Manrique house and other places he built/designed are very interesting
Sun not guaranteed but warmer than here
Usually we say at Puerto del Carmen - lots of choice of restaurants
