Foreign Holiday reccomendations, dd start school in Sept so last chance of cheaper prices

Dont know where to go, looking for a holiday with a 3 1/2 year old and a 2 year old for next year, to go before Sept, ideally not in school holidays to take advantage of slightly cheaper fares. Ideas so far - Mexico, but is it too built up, want child friendly but not huge hotels. Maldives, been before, would like to go but perhaps when dd's are a little older. Caribbean, but really not sure where. Any other suggestions of places where you have been please.

Went to Mexico last year with kids under 4 and I would not say it was mega built up (we were on Cozumel and also Paraisa Beach area of mainland. The hotel was quite a large complex though and I was led to believe that most of the hotels were of that proportion. That being said hotel was not crowded as on a huge site and it did not feel big (restaurants, beach and poolside were not heaving).

Sri Lanka is lovely and is South Africa (Cape Province region).
