Thinking of summer holidays now...
We'd like to rent a property, maybe a pool - in or just outside a small town. I am imagining somwehere within driving distance of a beach (not a 'major must'), hillside towns, museums, food markets, wineries, grottos and cave paintings...

Does this exist or have I just imagined it?

Try the area just south-west of Nîmes. Beaches are drivable, lots of wineries, a few grottos, plenty of food markets and picturesque things :)

For grottos and cave paintings you'll be wanting the Dordogne - somewhere around Sarlat or Les Eyzies. That should tick all the boxes apart from the beach.

The area round Carcassonne is very nice too. Lots of things to do.
