Am I right in assuming if we book flights, hotel, transfers seperately ourselves..we then can't use kids club? eg: thomson's kids club at the complex?

What do you think?

Not the daytime clubs but you can join in with the evening entertainment.

I used to work for First Choice and we took children who weren't F.C guests at Kids Club - independant travellers, kids on hols with other UK companies and (if they spoke English) we took children on hols with foreign companies.
Its all about making money(even in kids club) - We sold sessions to non guests at price (was 5euro at time) per session (plus any extra for a paying activity- choc party etc) or a cheaper rate if you booked a week/fortnight of clubs.
Might be worth asking at local Tui shop if you can pay locally for sessions, or chase it up in resort if you have already booked( as from my experience the travel agents tend to tell guests what they want to hear and leave the reps to deal with it in resort)
