Francophiles - Languedoc anyone?

I am looking to book 2 weeks in a villa in languedoc next Aug (starting early I know, but it is August). Would love Ceret/Collioure(Sp?)/Banyuls. Anyone been/live round these areas. Also, anyone know of good villas 2/3 bedrooms with private pool, pref within walking distance of shop. I know I'm asking a lot, that why I'm looking early .
Finally, anyone know when flight schedules are released for next year?

I love the Languedoc (& gascony/SW France) but we have only stayed on campsites, never the luxury of a villa.

French Life seem to have a good range.

Can't decide where we are going next year yet either?

Collioure is beautiful... possibly a bit touristy in season (have only been in winter). Nicer than Banyuls I think. Further up the coast (away from Spain, iyswim) is much more commercialised (e.g. Canet Plage). However, it's a long time since I have been down there (spent 5 months in Perpignan, but back in 1987-8), so I am only going on vague impressions. Sorry, no info about specific villas or flights. Just to say that it's definitely a nice area.

Ellbell, thanks for that. We are looking for somewhere near to the Spanish border & I am definately leaning towards Collioure, although I expect anywhere in August is going to be a bit touristy.
