I've been to the Longleat Spa last year and wouldn't say it's run down at all... they are probably making it sh*t hot like the others but it's in perfectly good nick!

I'd just go to the one nearest to you though - they are all much the same.

The "market place" (or whatever it is called - the shops, restaurant main area) is indoors at Longleat, but outdoors at sherwood forest. This only makes a difference if you are going when the weather is bad!
