Escape the recession for a year

Job hunting is becoming a bore do DH and I are plotting our escape from London for a year to live somewhere cheaper & sunnier. I'm thinking beach time possibly in southern India, and he has an NZ passport so we could also live & work in Oz or New Zealand.
I'd love any thoughts or tips anyone might have in advance, for planning a long trip such as this with two little ones, we have a new born & a 2.5yr old.

With a newborn and toddler I'd be going to OZ or NZ rather than India, but I'm the biggest wimp ever.

We picked NZ but hope we like it enough to stay longer than a year.
