Does anybody know what kind of tester children have when applying for sport scholarships at boarding schools like Harrow et cetera?

Usually a rotation of sports (including sports your kids may not be good at). At our school, nothing particularly exciting, basic and skill focused drills, nets for cricket, small-sided games (non-contact cor rugby).

Plus an application setting out the level they've played at and references from teachers and coaches.

Fitness and stamina tests like the bleep test.
