Strange question!

Does anyone know when schools start teaching more in depth about atoms like structures and stuff. (Don't understand any of it, sorry) Yr7 dd is totally fascinated and teaching herself at the moment.

I think it starts in KS3, and then goes on to different models of the atoms through the ages in GCSE. A really good starting book is It's Elementary by Robert Winston.

Mine started learning this in Y7, then in greater depth in Y9.

That's brilliant. Students learn so much easier if it is something they want to do rather than are told to do. I agree, it is a fascinating subject, but it is a bit like asking how long is a piece of string as studying sub atomic particles can go beyond phd. It is more important that she wants to know and is interested enough to do her own research.
