If you buy packs of chicken/ham from a supermarket and it says on the pack 'eat within 2 days of opening' but it is actually still in date although has been open for a week, and someone eats it, would they be ill?

I wouldn't think twice about eating it

Has the packet been re-sealed and kept air tight? If not I would not risk it. If it has I might.

You can tell a lot from the way meat smells and looks.
