they lose so much weight when they are ill (so much more than we do!).

Have you had her weight checked?

both mine are very thin (especially my son) but they eat like horses so I think they must have fast metabolisms.

How about healthy fat foods like avocado, peanut butter (if no allergy issue), olive oil in salads, oily fish etc.

Otherwise, I don't think a few portions of chips, ice cream, chocolate ever hurt as long as it's in moderation.

has she gottopn taller in the last few months? dd1 always looks limmer when she has agrowth spurt as her weight stays the same for ages. i only notice when her trousers are too short at the ankles but they are slipping down her waist.
