Forced to take omperzole for gastritis and I am very worried about the acid rebound!

3 weeks ago I developed food poisoning which led to gastritis. I didn't know I had gastritis so I was eating crap. I remember after I felt better I ate sausages coffee which made me so sick again and I lost so much weight. I cannot even drink water as my stomach feels so heavy and paralysed.
Anyways fast forward to week 3; I went to the doc and they done blood tests etc and stool samples including hpylori. Everything negative. They asked me to start omperzole in week 4 and I was reading about it and saw how it can cause acid rebound and symptoms worst than the initial symptoms when stopped. They only asked me to take it for 3 weeks but I saw cases of acid rebounds just from taking it for two weeks!
I am in dilemma, because I have zero symptoms at the moments because I am eating Plain food so should I still take it. I told the gp I am Symptom free now because I am Eating plain diet I.e. chicken and raw ingredients. Gp insisted in taking the ppi because he want me to start eating normal food and gain weight.
What should I do
I never had stomach issues prior to this incidet

I took it for about 2 years because of taking anti-inflammatories. I did have a bit of indigestion when I stopped, but just took the omeprazol every other day instead of every day for about a week. That did the trick.
I would be very surprised if you had any problems from 3 weeks.

I was taking it for about 2 months and my acid at night was a lot worse.
got so bad it burned my throat, I stopped taking the tablets and it’s calming down.

I took it for around two or three years and I weaned myself off it this year by just having it three days a week for a couple of months as it was no longer needed. I had no issues whatsoever, and I doubt you will after only 3 weeks. Prior to being on it all the time I would have it for 2 or 4 weeks at a time and then stop with no issues.

I have taken it on and off at various times -I have to if I take NSAIDs. I have never had any issues with it at all.

Have been taking it for a few years now and now coming off it. I take it usually every second day. Just one tablet as I was on two a day. I feel the acid sometimes but not half as bad as I used to.

II took omeprazole for 7 years and stopped cold turkey, no rebound.

You can also taper down slowly if concerned.

I’ve never had acid rebound from it.
